What’s for Lunch in 2040: Oregonians Forecast the Future of Food

In December, we asked our panelists to weigh in on a topic near and dear to our hearts and stomachs: food. With new trends in our diets and our food supply constantly in the news—from GMOs to gluten-free, biohacking to bacon bites—we wanted to find out what Oregonians see on the horizon and in their pantries. Most predict that we’ll eat healthier and cut back on the bacon bites and other animal indulgences in the future. But Oregonians have less of a clear vision of how we will use new technology and what our food supply should look like in the future.
